Hotels Revamp F&B With New Culinary Teams, Dining Options

INTERNATIONAL REPORT—From Mexico to the Caribbean to the U.S., three hotels are introducing refreshed F&B concepts with new culinary teams and dining options, giving guests new tastes and experiences. Here’s what to know:

Montage Los Cabos Introduces Culinary Team, Restaurant Concepts

Montage Los Cabos has revealed its culinary team and restaurant concepts for the recently opened resort.

The hotel has a food and beverage team led by Executive Chef Xavier Salomon, who will oversee all food and beverage programming across the resort including in-room dining, culinary partnerships and kitchen operations. He will also oversee Mezcal, the resort’s signature restaurant, and Marea, the oceanfront restaurant. Salomon works alongside Alexis Palacios, executive chef of Mezcal, and Chef Victor Valencia, who oversees culinary operations for Marea.

There is also Paletas, a contemporary marketplace with Mexican sweets, sundries and coffees, as well as beach and pool dining options and bar.

Four Seasons Resort Nevis Updates Dining Experiences

The Four Seasons Resort Nevis has plans to revamp two of its food and beverage outlets as part of its multimillion-dollar enhancement project revealed earlier this year. The new F&B concepts are expected to come online by December 2018. The new restaurant and bar concepts are EsQuilina and The Crowned Monkey Rhum Bar.

The current Neve will become EsQuilina, the resort’s new breakfast and dinner restaurant. In the mornings, EsQuilina will offer a breakfast buffet. In the evenings, EsQuilina will serve a Mediterranean-inspired menu. The restaurant will also include a chef’s table allowing for an interactive and intimate dinner with the chefs, giving guests a more personal dining experience.

The existing Library Bar will be transformed into the Crowned Monkey Rhum Bar. In the evenings, the bar will offer cigars and cocktail service, with a large rum barrel program and rum tasting programs, as well as light bites and charcuterie. The space will be opened up to the lobby, creating a more social and interactive experience for guests.

Terrace 16 to Debut This Summer at Trump Hotel Chicago

Trump International Hotel & Tower Chicago plans to open Terrace 6 Restaurant & Bar, helmed by Michelin-lauded Executive Chef Nick Dostal and Restaurant Director Adam Stark.

Terrace 16 is a 200-seat space with an outdoor patio, an indoor dining room and bar. With construction underway, the grand opening is slated for summer 2018. The floors and furnishings will undergo a complete redesign, with views overlooking the skyline, Chicago River and Lake Michigan.
