The Hilton Short Hill relaunched The Dining Room with a new look and refreshed menu.

SHORT HILLS, NJ—To help mark its 25th anniversary, the Hilton Short Hills reopened its full-service signature restaurant, The Dining Room, that now features a contemporary design along with a new menu created by Executive Chef Richard Kennedy.

The 120-seat restaurant, designed by New York City-based Bill Rooney Studio, has been reinvented as a seasonably inspired all-day dining venue that features tones of silver and taupe accented with russet leather chairs, rich woods, silky wall finishes, plush carpeting and silver leaf and illuminated decorative easels, showcasing modern art that provides visual interest to the room. Chandelier elements illuminate the space.

“The reopening of The Dining Room marks the beginning of a new chapter in the history of the hotel,” said Pablo Torres, general manager at the Hilton Short Hills. “We preserved the restaurant’s name because local residents recall The Dining Room with fond memories. With the relaunch, we hope that past customers as well as new ones, will return to the restaurant for an experience that will be as memorable as years past. We feel that our creative and innovative new menu and elegant, yet casual approach to fine dining is in keeping with today’s times. The Dining Room enables our guests to be themselves in a sophisticated, yet relaxed setting.”

The Dining Room will feature New American cuisine incorporating Chef Kennedy’s culinary preferences and reflects a farm-to-table approach with ingredients, meats and produce from the area’s farms and markets. The restaurant will serve line-caught fish exclusively from the East Coast.

Kennedy said, “We are building upon the former restaurant’s solid reputation that resonated with local customers. By reinventing The Dining Room with a fresh redesign and culinary approach, we are creating new dishes such as salmon wrapped in brick dough but retaining signature items including our Classic Caesar salad served tableside."
